Curry Vegetables and Rice Stuffed Bot-bot





I'm going to miss going to the market when we go back home to Texas, especially the sweet lady at the Moroccan food stall who sells Bot-bot and other goodies. Buying this flatbread and then stuffing it with tasty vegetables and rice has become a staple for us now—which is impressive seeing as the husband is of the male variety, which tends to get upset when you don't include meat and he loves this. If you can't get your hands on some fresh bot-bot then I'd try this with another type of flatbread, particularly one that is hollow so you can stuff it, however you could also just fold the bread over like a sandwich. This is something I'll be figuring out for myself in a couple of months.

the ingredients

1 tbsp curry paste
1-cup cream
1 large carrot
1 can corn, drained
1 cup chopped broccoli florets
1 cup cooked beans
3 cups cooked rice
3 bot-bots (or another type of flat bread that can be stuffed) cut in half

1. Peel and chop carrot and stream with broccoli until tender and set aside.
2. In a large skillet, combine curry paste and crème. You'll need to stir quite a bit to get the paste to dissolve
3. Add the remaining ingredients (including broccoli and carrots) and stir until everything is covered and warmed through.

4. Stuff each half bot-bot with mixture; serve immediately or wrap in foil and enjoy later.





This meal is great for making and then wrapping up to have as quick meals throughout the week, and you could also use leftover veggies in your stuffing mixture to get rid of leftovers.
